Thu and Co. was built on a single belief: that pastry is worth doing slowly. We laminate our doughs by hand, source our butter from small dairies, and never cut corners on the things that matter. Every bite reflects that commitment.

Thu learned to laminate dough in a tiny boulangerie outside Lyon. The techniques haven’t changed — chilled marble, quality butter, and no shortcuts. Every item in the case reflects that training.
